State of the pantry

Its time to take stock of what’s left in the pantry and freezer from last year’s garden that needs to get eaten up to make room for this year’s harvest, since I am eating kale, spinach, lettuce, green onions, and strawberries from the garden already.

This is where I keep most of my canned goods in the basement. This is how it looks right now, full of empty spaces and empty jars. Last fall it was crammed entirely full and I had to use some shelf space across the room as well for extra jars.

I also peeked in the freezer to see what was still lurking in there, too. I don’t have a list of the exact quantities I started out with in the fall, but this is what I have left to eat:

In the freezer:

Peppers: 2 + 1/2 gallon freezer bags

Peas: 1 +1/2 gallon freezer bags

Snow peas: 1/2 gallon freezer bag

Green beans: 1 +1/2 gallon freezer bags

Chili: 12 quarts

Carrot tomato soup: 3 pints

Spaghetti sauce: 7 quarts

In the pantry:

Pizza sauce: 8 quarts,  8 + 1/2 pints

Tomatoes: 4 quarts

Applesauce: 5 quarts, 9 pints

Pears: 7 quarts

Peaches: 7 quarts

Sliced apples: 15 quarts

Apricots: 2 quarts

Salsa: 8 pints

Strawberry jam: 1 + 1/2 pints

Apricot pineapple jam:8 pints, 14 half pints

Onions: about 2 dozen still hanging in there

Successes:

Pizza sauce in pints. One pint is enough sauce for 2 pizzas, and we make pizza almost every Friday night. We have used 3-4 dozen pints of pizza sauce since we canned it last year.

Chopped frozen bell peppers. We use these in eggs, on pizza, in stir frys, etc. I think we’ve gone through at least 4-5 gallon freezer bags of them already.

Failures:

Sliced apples. I think we’ve only used 1 quart of these. We just aren’t using them to make desserts like we though we would.

Apricots. We don’t like canned apricots.

Frozen spaghetti sauce. Spaghetti for dinner should be quick and easy. Its not quick at all when you have to wait to thaw out a frozen jar of sauce. We use the canned quarts much more. I won’t freeze spaghetti sauce anymore.

I’ve been really busy the last couple of days getting ready to do a garage sale on Saturday. Everything is out in the garage or the driveway now, priced and ready to go. Already the house feels a bit roomier. (Ahhhh…) I’m already feeling like getting started on a new sewing project now that my sewing room is cleaned up.
